No-Bake Individual Kiwi and Pistachio Cheesecake

No-Bake Individual Kiwi and Pistachio Cheesecake Food Recipe

Makes for 4 Individual Cheesecake : 
 Ingredients For Base crust: 

  • 100 grams Green Pistachio
  • 50 Grams Almond Flakes
  • 1 drop of Green Food Coloring (optional)
  • 2 tablespoon of Unsalted Butter ( Room temperature)

    For the Cream Cheese:
  • 1 pack of 200 grams of Original Philadelphia Cream Cheese
  • 300 Ml Double Cream/ Whipping Cream
  • 6 tablespoon of Granulated White Sugar
  • 1 teaspoon of Vanilla Extract

    For the Kiwi Topping:
  • 2 Kiwi
  • 1 tablespoon Granulated White Sugar
  • 1/4 cup Room Temperature Water + 2 tablespoon
  • 1 drop of Green Food Coloring(optional)

    Directions: 
  • Start by preparing the base of your Kiwi and Pistachio Cheesecake.
  • For that take your Green Pistachios and your Almond Flakes.Pop these into your blender.
  • Process these until a fine powder is obtained.
  • If a more vibrant Green is desired, add in 1 drop of Green Food Coloring.
  • Transfer the Pistachio and Almond Powder into a deep bowl.Reserve.
  • Meanwhile, Pop your butter into the microwave for around 20 seconds until melted.
  • Make a hole in your Pistachio/Almond Powder and pour in your butter.
  • Mix well until well incorporated.
  • You should obtain a crumble type texture which should hold together when pressed together.
  • If not, add 1 more melted Butter to the Pistachio/Almond Paste 
  • Line a tray with parchment paper.
  • Place over your ring moulds
  • Take around 2 tablespoon of this mixture and press at the base of your ring moulds.
  • Level your Pistachio/Almond Base with the back of your spoon or even the bottom of a glass
  • Pop your ring molds into the fridge to set for 30 minutes.Meanwhile, prepare your Cream Cheese.
  • Pop your Room Temperature Philadelphia Cheese into a deep bowl together with your Granulated White Sugar.
  • Using an electric whisk,over medium speed, cream your Cheese together with your Sugar until smooth and creamy.
  • In the same Bowl with the Cream Cheese and Sugar, pour in your Chilled Double Cream
  • As well as your Vanilla Extract.
  • If you have checked my other Cheesecake recipes, you will notice I have slightly changed this recipe concerning the Cream Cheese.
  • Whisk over medium speed until mixture comes to a nice creamy and velvety thick Cream.
  • You will end up with a hard Cream Cheese texture.
  • Beat it until it is just nicely creamy and thick, a bit like a soften ice cream texture
  • Pipe/ spoon your Cream Cheese into your Ring Mould until 3/4 filled.
  • Level it with your spoon. Cover with cling Film.Pop back into the fridge and allow to set minimum 4-6 hours or overnight preferablyPop into the fridge and allow to set for at-least 30 more minutes.
  • Meanwhile, prepare your Kiwi Topping.
  • For that simply, peel and cut roughly cut your Kiwis. Blend this into a smooth paste. Reserve.
  • Meanwhile, prepare your Green Jelly to help set your Kiwi Topping. Dilute your Agar Agar into your 2 tablespoon of water.
  • Place over medium heat, until your sugar dissolves.
  • The moment your sugar dissolves, pour in your diluted Agar Agar as well as your drop of Green Food Coloring if using any.Bring to boil. Switch off the heat.Allow to cool. slightly.  Pour the partly set Jelly with your Kiwi Puree. Mix well.
  • Spoon around 1 to 2 tablespoon of the Kiwi Puree on the top, depending upon your taste if you love more or less of kiwi as topping. Level the top with the back of your knife. Cover with Cling Film
  • Pop back into the fridge and allow to set minimum 4-6 hours or overnight preferably. 
  • When serving, carefully unmold your cheesecake on your serving plate decorated with a mint spring and some thinly chopped Pistachios to remind the base of the Cheesecake and if desired like i did to add a touch of colour, a coulis of red berries
