20 g fresh baker's yeast
60 g butter
25 cl milk
60 g sugar
500 g flour
150 g of chocolate
Heat the cream, add the chocolate broken into squares. Mix well.
Put the flour, sugar and salt in a bowl and mix. Warm the milk, dilute the yeast and add the melted butter. Add the beaten eggs and add this mixture to the flour. Beat. Leave to rest for at least 1 hour in a cool place.
On a floured surface, roll out your dough, using a cookie cutter, cut out rounds of 4 cm in diameter and 1/2 cm high. Place a square of chocolate in each doughnut and close with a second doughnut, pressing them together. Leave to rise for another 30 minutes. Heat the oil and cook the doughnuts. Drain on paper towels.
