5 tbsp sugar
2 cups of milk
5 tbsp instant coffee
5 tbsp very hot water
Vigorously whisk the soluble coffee with the sugar and hot water until it changes texture, doubles in volume and becomes lighter in colour (use an emulsifier or a lot of elbow grease)
Pour the hot or room temperature milk into two clear cups or glasses, leaving room for the whipped coffee on top.
Pour the whipped coffee on top into each cup and enjoy.
