Fish in Sweet and Sour Sauce

Ingredients
- 500 grams fish fillet
- 2 carrots, cut into round shape
- 1 green pepper, cut into cubes
- 1 red pepper, cut into cubes
- 1 medium onions, cut into cubes
- 1 tomato, cut into cubes
- 1/2 pineapple, cut into cubes
- 125 grams, canned mushroom or you can use fresh mushroom
- 125 grams, canned whole corn, cut into round shape
- 1 tablespoon garlic paste
- 1 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons vinegar
- 2 stands of spring onions, cut into long strips
- 1 beaten egg
- 1 cup cornflour
- Salt
- Pepper
- Oil
Instructions
- Wash fish and pat dry with paper towel
- Cut fish into medium sized cubes and add salt and pepper
- Put the fish pieces in a large bowl, add the beaten egg and some cornflour
- Heat oil in a large skillet and carefully fry the fish pieces
- Drain on a paper towel and put aside
- Parboil the carrots in some hot water for approximately 5 minutes
- In another skillet heat 2 tablespoon of oil
- Add the mushroom and sauté for 2-3 minutes, remove and put aside
- In the same way sauté the corn, remove and put aside
- Heat 2 tablespoon of oil in the same skillet, add the onions, tomatoes, and garlic paste and sauté for a few minutes
- Add the carrots, mushroom corn, pineapple and pepper and sauté for a few minutes
- In a cup combine the soy sauce, vinegar, sugar together with 2 tablespoon of cornflour and water and pour into the skillet
- Add the fish pieces and season with salt and pepper
- Add some water if the mixture is too dry and allow to simmer for a few minutes
- Turn off the heat and garnish with spring onions
