Honey bubble rice
Ingredients:
125g butter, chopped
1/2 cup (110g) caster sugar
2 tablespoons honey
1 teaspoon vanilla essence
5 cups rice bubbles
Directions:
1) Line a 20cm x 30cm slice tin or baking dish with baking paper.
2) Stir butter and sugar in a small saucepan over medium-high heat until sugar dissolves. Bring to a boil. Stir in honey then boil for about 4 minutes. Stir in vanilla then remove from heat.
3) Place rice bubbles in a large bowl then pour in butter mixture. Mix well. Spoon into prepared tin. Press down flat with a rubber spatula then allow to set before slicing.
