Mango Kutcha

Mango Kutcha Food Recipe

Ingredients

  • 2 green mangoes
  • 4 sliced red chillies
  • 1 tablespoon turmeric
  • 50 ml white vinegar
  • 1 medium onion finely chopped
  • 50 ml mustard oil
  • 2 tablespoons crushed mustard seeds
  • 1 tablespoon crushed ginger
  • 1 tablespoon crushed garlic
  • salt to taste
  • Please note that all spoonful measures are flush spoonfuls.

 

Method

  1. Wash the mangoes. Coarsely grate into a bowl. Traditionally, the mango is crushed in a mortar and pestle. Kutcha means crushed.
  2. Blend the turmeric powder into the vinegar to make a paste.
  3. Over medium heat, put the mustard oil in a saucepan large enough to contain the mango kutcha. Stir fry the crushed ginger, garlic and sliced red chillies. Cook for 1 minute. Add the vinegar and turmeric mixture. Mix well.
  4. dd the finely chopped onions and cook for 2-3 minutes.
  5. Add the grated mango to the fried mixture. Add the crushed mustard seeds. Mix well and cook for 2-3 minutes.
  6. Add salt to taste.
  7. Serve hot or allow to cool down. Recommended as an accompaniment for dhal purees.
