INGREDIENTS FOR 4

500 g of fresh mines (egg noodles found in a chinese store)
350 g of chicken / meat. Optional : shrimp
2 cloves of minced garlic
1 onion, chopped
1 tablespoon of oyster sauce
1 tablespoon dark black soy sauce
Ajinomoto (Chinese salt)
3 branches spring onions (scallion) thinly sliced
1/2 teaspoon of brown or white sugar
ground pepper

PREPARATION

Put a large pot filled with water and a drop of oil to boil.

In a hot frying pan without fat fry the meat for 5 minutes.

Add the onion and garlic mix well and cook for 5 minutes. Add Pepper and sugar, oyster sauce, soy sauce and a little water and continue cooking, stirring to ensure that all meat is linked to the sauce.

After 5 minutes, adjust the seasoning if necessary and put out the fire it is ready.

Take a small strainer with long handle and put a portion of noodle in and put it in the boiling water. The noodles should not be thrown into the water like when you make spaghetti but remain in the strainer so that you can easily get them out without having to drain the water.

Cook each portion for 2 minutes. Once the noodles are cooked put them on a plate, put a little pepper and a pinch of ajinomoto. Then put some meat and sprinkle the chopped spring onions it’s ready.
