Stewed Okra with Red Chillies Food Recipe

Ingredients

500 grams okras (lalos)
(choose tender ones)
1 medium onion finely sliced
1 tablespoon crushed garlic
1 tablespoon crushed ginger
3 red chillies
2-3 tablespoons vegetable oil
1 tablespoon finely chopped parsley
salt and pepper to taste

Optional
1 bacon rasher finely sliced

Method

Wash okras and cut off stems. Finely slice the onion and chop the parsley leaves. Remove stems from the red chillies and slice into halves lengthwise. Optional: Cut off the fat from a bacon rasher and finely slice the lean part into thin strips.
In a heavy based saucepan, heat up 2-3 tablespoons of vegetable oil over medium heat. Optional: Stir fry the thin bacon strips. Put in the crushed garlic, crushed ginger, sliced onion and the sliced red chillies. Stir fry until the sliced onion is cooked and become transparent.
Add the okras and gently mix with the other ingredients. Reduce heat to medium-low. Allow to stew and gently stir at intervals until the okras are cooked and tender. Be careful not to squash the okras. Season with salt and pepper to taste.
Serve hot and garnish with the chopped parsley.
Eat with rice, black lentils or meat.
