8 red ripe tomatoes (medium size)
4 sprigs fresh basil
Juice from 1 lemon
salt and pepper to taste
Boil enough water to submerge the tomatoes. Wash the tomatoes and immerse into the boiling water for 1 minute.
Remove from boiling water, peel off the skin, cut the tomatoes in halves and discard the seeds.
Peel the cucumber and cut into small pieces (2 cm pieces).
Place the tomatoes and cucumber pieces in a blender. Season with salt and pepper. Add the lemon juice. Blend the tomatoes and cucumber pieces together until just blended.
Pour the mixture in individual bowls and place in the refrigerator for 30-40 minutes.
Sprinkle with chopped basil leaves before serving.
